If you see an app disappear from your iPhone or iPad without warning, you're not going crazy. One of the new iOS 11 tricks is called “Offload unused apps”. It's designed to help you save space on your device, but if it works without you knowing, it's quite a surprise to see apps disappear from your iPhone.

Therefore, we can see that this does not remove the data on the phone from the apps, only the app file itself. Reinstalling an app will re-enable access to your data.
Apple doesn't have a help page on this feature, so its exact workings are unknown. Offload unused apps should be turned off by default, but it looks like iOS can turn it on when running out of space.
